Simon's Wok is pretty neat all-vegan Chinese food. The portions are large and it's very affordable. It's only real minus is that it's a bit of a hassle to get to on public transit.
Fressen is well-liked but I think overpriced. I've never been blown away by it, but the pricing is at a level where I expect to be blown away at least some of the time. It is also all-vegan.
There are a lot of great vegan options at Fresh, which there are three locations of around the city, well-situated. I think that they may also have some non-vegan stuff, but they're very vegan-friendly.
There are lots of other places in town where a vegan can eat that aren't explicitly vegan. It's a pretty easy town to get by in as a vegan. kristnaskelfir and svala_lj are recently no-longer-vegan but have a significant number of years under their belt as vegans in Toronto and could give a few more suggestions.
